Low Calorie Celery Broiled Chicken

Ingredients
  Chicken 3 Pound, split lengthwise / quartered (1 Whole)
  Lemon juice 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Black pepper 1 Teaspoon
  Celery stalks 4 , cut into half
Directions

1. Preheat the broiler. Rub the chicken all over with the lemon juice, and sprinkle with the salt and pepper. Place the chicken, skin side down, on the rack of the broiler pan. Put 2 pieces of the celery into the cavity of each chicken half or 1 piece into each quarter.
2. Place the broiler pan 6 to 9 inches from the heat, and broil the chicken for 10 to 12 minutes. Turn the chicken skin side up, and place the remaining pieces of celery over the chicken. Broil until golden brown and tender—about 10 minutes. Pierce the thickest part of the thigh with a small knife; if the meat is no longer pink, the chicken is done. Discard the celery. Serve with Baked Stuffed Tomatoes.
