Green Goddess Chicken Toss Up
|Cold cooked chicken/Turkey||2 Pound|
|Torn salad greens||3 Cup (48 tbs)|
|Toasted almonds/Broken walnuts||1⁄4 Cup (4 tbs)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Sliced raw mushrooms||4 (Adjust Quantity As Needed)|
|Diced gruyere cheese||1⁄2 Cup (8 tbs)|
|Avocado||1 , diced|
|Lemon juice||2 Teaspoon|
|Green goddess dressing||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
Cut chicken in chunky pieces and arrange half in a deep bowl lined with broken or coarsely shredded crisp lettuce, romaine or escarole.
Sprinkle with nuts, celery and mushrooms.
Cover with remaining chicken, the cheese and avocado coated with lemon juice.
Cover with plastic and chill.
At serving time, toss with the Green Goddess Dressing.
Grind black pepper over the mixture.
Toss again and serve if you wish with fresh tomatoes and a crusty French stick.
