Perfect Fried Chicken

Ingredients
  All purpose flour 1⁄3 Cup (5.33 tbs)
  Paprika 1 Teaspoon
  Ready to cook broiler fryer chicken 3 Pound (1 Whole)
  Shortening 2 Cup (32 tbs) (For Deep Frying)
Directions

Combine flour, paprika, 1 teaspoon salt, and 1/4 teaspoon pepper in plastic bag; add chicken pieces and shake.
Heat shortening (1/4 inch deep in skillet) till drop of water sizzles.
Brown meaty pieces first; then add remaining pieces (don't crowd).
Brown one side; turn with tongs.
When lightly browned, 15 to 20 minutes, reduce heat; cover tightly.
(If cover isn't tight, add 1 tablespoon water.) Cook till tender, 30 to 40 minutes.
Uncover last 10 minutes of cooking.
Makes 4 servings.
Note: Add 1/2 cup fine dry bread crumbs to flour for more crusty coating.
