Cheese Chicken Deluxe
|Dry mustard||1 Teaspoon|
|Milk||1 1⁄4 Cup (20 tbs)|
|American cheese||1 Cup (16 tbs), grated|
|Egg||1 , beaten|
|Cooked chicken||1⁄2 Pound, cooked chicken|
Melt butter in top of double boiler over boiling water.
Blend in flour and seasonings and gradually add milk, stirring constantly.
Continue to cook over boiling water until mixture is smooth and thickened.
Stir to keep smooth.
Add cheese, cover and let stand over hot (not boiling) water until cheese is melted and well blended.
Slowly add part of the hot mixture to egg, stir to mix well and return to double boiler.
Cook for 2 minutes longer, stirring.
Remove from heat but keep over hot water.
Split and toast buns; arrange chicken slices on top, pour cheese sauce over all.
Garnish with dash of paprika, a sprig of parsley, serve immediately.
