Delicious Broiled Chicken
|Melted butter||3 Tablespoon|
|Olive oil||3 Tablespoon|
|Dry shallots||2 , finely chopped|
|Chopped fresh parsley||2 Tablespoon|
|Garlic||2 Clove (10 gm), smashed and chopped|
|Crushed chillies||1⁄4 Teaspoon|
|Chicken||3 1⁄2 Pound, cleaned and cut into 8 pieces|
|Lemon||1 , juiced|
Preheat oven to 350 Â°F (180 Â°C).
Combine melted butter and oil in small bowl; set aside.
Place shallots, parsley, garlic and crushed chilies in mortar. Mix well and add lemon juice; mix again. Stir half of butter/oil mixture into chilies mixture; set aside.
Season chicken pieces well. Brush leftover butter/oil mixture over chicken and place skin-side down in roasting pan. Change oven setting to broil and cook chicken 6 in (15 cm) from broiler element for 8 minutes.
Baste chicken, turn pieces over and continue broiling 8 minutes. Turn pieces over again and change oven setting to 350 Â°F (180 Â°C); cook 15 minutes, basting frequently.
About 4 minutes before chicken is cooked, spread shallot/chilies mixture over chicken pieces. Spoon cooking juices over meat and serve.
