1 broiler-fryer chicken cut in serving pieces
1 package seasoned coating mix for chicken
1. Rinse chicken pieces and pat dry.
2. Dip chicken pieces in milk and then shake in a bag with coating mix. Place breaded pieces, skin side up, in a 2-quart glass baking dish with thin end toward center and thicker end toward outside. Sprinkle with paprika. Cover with waxed paper. Cook in microwave oven 12 minutes at HIGH.
3. Rearrange chicken pieces and cook covered in microwave oven about 8 to 10 minutes at HIGH, or until done.
4. Remove from oven, cover with aluminum foil and allow chicken to stand 5 minutes before serving.
