Lemon Baked Chicken

Ingredients
  Vegetable oil spray 1
  Fresh lemon juice 2 Tablespoon
  Vegetable oil/Acceptable margarine, melted 2 Tablespoon (acceptable)
  Garlic 1 Clove (5 gm), crushed
  Freshly ground black pepper 1⁄2 Teaspoon
  Frying chicken 3 Pound, cut into serving pieces, skinned, all visible fat removed
Directions

Preheat oven to 350° F.
Lightly spray a baking pan or a shallow casserole dish with vegetable oil.
In a small bowl, combine lemon juice, oil, garlic and pepper.
Set aside.
Rinse chicken and pat dry.
Arrange chicken in prepared pan or dish.
Pour lemon mixture over chicken pieces.
Cover and bake about 40 minutes, or until tender, basting occasionally.
Uncover casserole and bake 10 minutes longer to allow chicken to brown.
