Filipino Chicken Asado

Chicken Asado (or Asadong Manok) is an awesome Filipino chicken dish and one of the best bets of the province of Pampanga. This dish uses simple ingredients and the cooking process is not so complicated. Hmmm, seems like you’re eyes are hooked on the picture; let me clarify things right away to avoid confusion. Yes, the image that you are looking at is really Chicken Asado and not Chicken Afritada. But why is the base reddish? Unlike the usual dark asado dishes that we used to know (that are actually influenced by Chinese Cuisine), this special asado recipe uses tomato sauce as the base ingredient. I first tried this dish when I visited Sta. Rita town in Pampanga. I thought that it was just an ordinary dish – but I got mesmerized right after the spoon left my mouth. At first, I can’t identify the ingredient that makes this semi-sour dish so rich and tasty until the host told me that he used butter to bring-in more taste and life to the dish. Pretty clever, isn’t it?
Ingredients
  Chicken 2 Pound, cut into serving pieces
  Lemon juice 1⁄4 Cup (4 tbs)
  Soy sauce 2 Tablespoon
  Butter 1⁄4 Cup (4 tbs)
  Tomato sauce 1 1⁄2 Cup (24 tbs)
  Onion 1 Large, diced
  Dried bay leaves 2
  Potatoes 2 Large, quartered
  Salt 2 Teaspoon
  Ground black pepper 1⁄2 Teaspoon
  Cooking oil 3⁄4 Cup (12 tbs)
Directions

1. Rub the chicken with salt and pepper and let stand for at least 30 minutes.
2. Heat a frying pan then pour-in the cooking oil and Pan Fry the chicken. Set aside.
3. Heat a cooking pot or wok then put-in the butter.
4. When the butter is hot enough, add the onions and sauté until the texture becomes soft.
5. Add-in the bay leaves and cook for a minute.
6. Pour-in the tomato sauce and bring to a boil.
7. Add the soy sauce and lemon juice then stir to ensure that the mixture is properly distributed and simmer for 5 to 7 minutes.
8. Add the pan-fried chicken and simmer for 10 minutes.
9. Place the potatoes in and continue to simmer for 7 to 12 minutes.
10. Turn off the heat then transfer to a serving plate and serve.
11. Share and enjoy!

Guy from Pampanga, I suggest you try to cook the Chicken Asado by the Panlasang Pinoy. I believe this is a variation of what you know. Just try cooking it and find out which one is the best. We should always find ways to expand our skill in cooking the Pinoy food. This is cooking innovation. Happy cooking.

Ang panghihiya di magandang gawi yan. Pwede namang tayong pumuna in a constructive way lalo na kung marmi ang nakakabasa.Let us make our words bw sweet like honey so when we eat them we find eating them satisfying. By the way, I have tried the Chiken Asado the Panlasng Pinoy way at masarap. Let us put it this way, The Chicken Asado of the Panlasang Pinoy is a variation of what you know, for cooking is not an absolute way because you can always improve the recipe for general acceptability. The Chicken Asado recipe here is authentic Panlasang Pinoy. It is Panlasang Pinoy Chicken Asado and not Pampanga Chicken Asado. Just try the Panlasang Pinoy Asado recipe. Happy cooking. he did mention that you can use calamansi coz its better,Please stop critizing its his version so if you want to do his do it if you dont then do your own version,I like watching him coz he give an idea on how to cook the food i want and its up to me to do some the changes on the recipe.If you dont believe on his method of cooking why still bother watching panlasang pinoy.ME,I LOVE IT.......

I strongly agree with you, Ms ME, I LOVE IT. That guy should stop criticizing the version of Ang Panlasang Pinoy. If he doesn't like the version of Panlasang Pinoy, then he should stop watching it. Ano ba ang problema mo? Just like you, Ms. ME, I LOVE IT, I enjoy watching Ang Panlasang Pinoy because I am learning. Many viewers are watching it and they are learning from the demo-cooking. Mabuhay ang Panlasang Pinoy!

Ha,ha,ha,,,singit ka kasi ng singit hindi muna man pala alam ang topic!...IKAW dyan ang napahiya at yung panlasang pinoy...mali naman pala tinuturu nila,,,I dont know asado but my wife do...guy from pampanga is right!

thanks for your suggestion but I rather stick with the original recipe and the right cooking proceedure.Your version is not a variation of what I know but its a variation of the original "kapampangan asado"..you should mention on your video that you have made some changes on the original recipe...Anyway you can cook it the way you want it...but I am pretty much sure that your version is not as delicious compare to the original...Dun palang sa LEMON,,sablay kana,,,mas masarap ang KALAMANSI...always remember that...

para po dun sa mga nang hihiya at magaling na magluto at yun ayaw ng version ng panlasang pinoy ,magluto na lng kayo ng para sa inyo at itago na lng nyo ..ako'y nagpapasalamat sa ating kababayan na lumikha nitong programa na ito nakatulong ito ng malaki sa akin d2 ako na2to maglu2 at hanggang nagyun ay nanunood parin ako d2 at nagaaral ng iba pang mga lutuin..maraming salamat po sa inyo...gb...

Keep up the good work Panlasang Pinoy. Marami kayong mga natutulungan sa pagluluto, lalo na ang hanap natin ay ang panlasang pinoy.Doon naman wa walang magawa kundi ang pumuna na di maganda, pwede ba huwag na lang kayong manood sa programang ito. Ayaw mamin na masaktan ninyo ang Panlasang Pinoy dahil in the first place yong mga puna ninyo, walang basihan. Masarap ang mga putahe ng Panlasang Pinoy. We love Panlasang Pinoy!
