Minced Chicken

Ingredients
  Chicken 1 Pound, cold (cooked)
  White coating sauce 1 Pint
  Eggs 4 Small (poached)
  Salt To Taste
  Pepper To Taste
Directions

Boil chicken bones and trimmings about 1 1/2 hr., use this stock to make the sauce.
When sauce is cooked, add minced chicken, season well, and heat thoroughly.
Serve in a shallow dish, very hot, with poached eggs on top.
