Fat-Free Chicken With Olives

Ingredients
  Olive oil 1 Tablespoon
  Assorted chicken pieces 3 Pound, skinned
  Fat free low sodium chicken broth 1 1⁄4 Cup (20 tbs)
  Red wine vinegar 2 Tablespoon
  Chopped pitted green olives 1⁄4 Cup (4 tbs)
  Lemon 1 , cut into 8 wedges
Directions

1. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, and cook 4 to 5 minutes on each side or until browned. Add chicken broth and vinegar; cook, uncovered, 7 minutes. Add olives and lemon wedges. Cover, reduce heat, and simmer 20 minutes or until chicken is done.
