Fat-Free Chicken With Olives
|Olive oil||1 Tablespoon|
|Assorted chicken pieces||3 Pound, skinned|
|Fat free low sodium chicken broth||1 1⁄4 Cup (20 tbs)|
|Red wine vinegar||2 Tablespoon|
|Chopped pitted green olives||1⁄4 Cup (4 tbs)|
|Lemon||1 , cut into 8 wedges|
1. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, and cook 4 to 5 minutes on each side or until browned. Add chicken broth and vinegar; cook, uncovered, 7 minutes. Add olives and lemon wedges. Cover, reduce heat, and simmer 20 minutes or until chicken is done.
