Chinese Barbecue Fish

Ingredients
  Trout/Mackerel or red mullet 4
For the marinade
  Garlic 2 Clove (10 gm), crushed
  Chopped ginger 1 Tablespoon
  Sesame oil 2 Teaspoon
  Light soy sauce 3 Tablespoon
  Medium dry sherry 2 Tablespoon
  Lemon juice 1 Tablespoon
  Caster sugar 1 Teaspoon
To serve
  Shredded lettuce/Pak choi / other greens 2
  Salt 1 Teaspoon
  Szechwan peppercorns 1 Teaspoon
Directions

1. Slash the fish 3 times on each side and place on a large sheet of foil.
2. Mix the marinade ingredients and pour over the fish, rubbing in well. Cover and leave to marinate for 2 hours.
3. Barbecue or grill the fish, using a medium heat, for 3-4 minutes on each side, brushing with the marinade during cooking.
4. Transfer to a serving dish and garnish with lettuce, pak choi or greens. Mix the salt and peppercorns together and serve separately.
