Chicken Provencale

Ingredients
  Spring chicken/Poussin 1
  Salt To Taste
  Pepper To Taste
  Corn oil 1 Tablespoon
  Chopped onion 1 Tablespoon
  Dry white wine 6 Tablespoon
  Tomatoes 4 , peeled, seeded and chopped
  Garlic 1 Clove (5 gm)
  Chopped parsley 1 Teaspoon
  Black olives 12 Small
Directions

Heat the oil in the chafing pan, put in the chicken and sauté for a few minutes.
Add the onion and as soon as it begins to brown add the wine and cook until it is reduced by half.
Add the tomatoes, garlic and parsley and continue to simmer for about 15 mi
