Roast Chicken Tacos
|Salsa fresca/Purchased salsa||1 Tablespoon|
|Whole chicken||1 , roasted|
|Ripe avocado||1 , pitted, peeled, and thinly sliced|
|Lemon juice||2 Tablespoon|
|Green onions||2 , thinly sliced|
|Shredded cheddar cheese||2 Cup (32 tbs)|
Stack tortillas, wrap in foil, and heat in a 350° oven for 15 minutes.
Meanwhile, prepare Salsa Fresca.
Place chicken on a platter or cutting board.
Moisten avocado with lemon juice.
Arrange avocado, green onions, cheese, cilantro, and salsa in small bowls around chicken.
Place warm tortillas in a basket.
For each serving, tear or cut off pieces of chicken and place in a tortilla.
