Barbecue Style Mustard Chicken

Ingredients
  Chicken 3 1⁄2 Pound
  Butter 2 Ounce, softened
  Grain mustard 3 Tablespoon
  Lemon rind 1 Teaspoon, grated
  Lemon juice 1 Tablespoon
  Chopped tarragon/Rosemary 1 Teaspoon
  Salt To Taste
  Ground black pepper To Taste
Directions

Joint the chicken into eight pieces and trim off any excess fat, leaving the skin on. In a bowl, cream the butter and work in the mustard a little at a time, using a wooden spoon. Add the lemon rind, then gradually beat in the lemon juice and the herbs. Season well. Spread the mustard butter over the chicken pieces, coating evenly.
Heat the grill and cook the chicken on the rack for 10 to 15 minutes on each side until the skin is crisp and golden and the chicken is tender. Some of the mustard mixture may slide off, in which case spoon it from the grill pan over the chicken when serving.
When cooking is done on a barbecue, keep back some of the mustard butter and spread it on the chicken pieces as they cook.
