|Broiling chicken||3 Pound, split lengthwise|
|Onion||1 Cup (16 tbs), thinly sliced|
|Butter||1⁄2 Cup (8 tbs), melted|
|Sherry||1 1⁄2 Cup (24 tbs) (dry)|
|Fresh mushroom caps||1 Cup (16 tbs)|
Preheat oven to broil.
Place chicken in a shallow pan with onion slices.
Combine butter with sherry.
Pour 1/3 of the sherry mixture over chicken and broil 6 inches from a low broiler flame for 20 minutes.
Pour remaining sherry mixture over chicken and continue to broil until chicken is nicely browned (20 to 30 minutes longer).
During the last 15 minutes of cooking, add the mushroom caps.
