Broiled Chicken Modified

Ingredients
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Lemon juice 1 Tablespoon
  Broiler-fryer chicken 2 1⁄2 Pound, quartered
  Salt To Taste
  Pepper To Taste
Directions

Combine butter and lemon juice, if desired; brush over chicken halves.
Season with salt and pepper.
Place skin side down on a rack that stands 3 to 4 inches above the bottom of a shallow baking pan.
Bake at 425° about 1 hour (20 or 30 minutes per pound).
