Devils On Horseback
|Chicken livers||2 (Or Equivalent Of Calf'S Liver)|
|Canned prunes||8 (Well Drained)|
|Rindless rashers streaky bacon||8 Small (Thin)|
|Bread squares||4 Small|
|Olives stuffed with pimento||4|
Gently cook the liver in a little butter, then cut it into 8 pieces.
Season well and dust with a few grains of cayenne pepper.
Stone the prunes and stuff with the liver.
Stretch the bacon to double its size with the flat of a knife.
Encircle each prune in a piece of bacon and secure with a cocktail stick.
Grill all over or bake in a very hot oven.
Fry the bread in shallow bacon fat and drain well.
Remove sticks and place the "devils" on the bread.
Garnish with a pimento-stuffed olive.
