|Broiler fryer chicken||3 Pound, halved lengthwise|
|Cooking oil||1 Tablespoon|
|Butter||1⁄2 Cup (8 tbs), softened|
|Tomatoes||2 Large, peeled, seeded, and finely chopped|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Snipped parsley||1⁄4 Cup (4 tbs)|
|Dry sherry||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
Brush chicken with oil; sprinkle with salt and pepper.
Place, bone side down, over medium-hot coals.
Grill 25 minutes.
Turn; grill 20 minutes more.
Meanwhile, combine remaining ingredients (will separate slightly).
Brush over chicken; grill till tender, 10 to 15 minutes.
Turn twice and brush with sauce
