Roast Chicken With Onion Apple Sauce

  Roasting chicken 1 Large
  Apple 1 , cut in to chunks
  Onion 1 , cut in to chunks
  Melted butter/Margarine 6 Tablespoon
  Chopped onions 1 Cup (16 tbs)
  Rosemary 1⁄8 Teaspoon, crushed
  Canned applesauce 1 Pound (1 Can)
  Chicken broth 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste

Sprinkle salt and pepper inside cavities of chicken; put apple and onion chunks inside cavities.
Truss chicken, and place breast down on a rack in a shallow pan.
Brush with part of melted butter.
Roast in a moderate oven (350°) for about 1 hour.
Meanwhile, saute the chopped onions in remaining butter.
Add rosemary, applesauce, and 3/4 cup of the broth; heat to simmering.
Remove chicken, drain fat from pan, remove rack, and set chicken directly in pan, breast up.
Pour applesauce mixture over top of chicken.
Return to oven and continue cooking about 1 hour, or until breast meat is tender, basting several times with apple mixture in pan.
Discard apple and onion from inside and arrange chicken on platter.
Heat apple mixture in pan, adding broth to make a good consistenc
