Cold Lemon Garlic Chicken
|Boneless chicken breasts||4|
|Garlic||1 Clove (5 gm), crushed with a knife|
|Lemon||1 , juiced|
|Cold pressed vegetable oil||2 Tablespoon|
|Fresh thyme/Dried thyme||To Taste|
|Freshly ground pepper||To Taste|
|Vegetable seasoning||To Taste|
Put all the ingredients in a bowl and toss to combine.
Cover and refrigerate for 2 hours, Preheat the broiler.
Remove the chicken breasts from the marinade and dry with paper towels.
Broil for 4 to 5 minutes on each side, or until cooked but not dry.
Let cool, cover well with plastic wrap or foil, and refrigerate until you pack the picnic lunch.
