Exotic Chicken Kabobs
|Lemon juice||2⁄3 Cup (10.67 tbs)|
|Minced fresh mint||1⁄4 Cup (4 tbs)|
|Olive oil||2 Tablespoon|
|Skinless boneless chicken breast halves||24 Ounce, cut into 1 -inch-wide strips (6 Breasts, 4 Ounces Each)|
|Cantaloupe||1 Small, peeled, seeded and cut into 2-inch cubes|
|Vegetable cooking spray||1|
Combine lemon juice, mint, oil, and honey in a small bowl; stir well.
Place chicken and cantaloupe in a shallow dish.
Pour half of lemon juice mixture over chicken and cantaloupe, reservingremaining lemon juice mixture.
Cover and marinate in refrigerator at least 8 hours, stirring occasionally.
Cover and refrigerate remaining lemon juice mixture.
Remove chicken and cantaloupe from marinade; discard marinade.
Thread chicken and cantaloupe alternately on 6 (12-inch) skewers.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place kabobs on rack, and cook about 12 minutes, Turning and basting frequently with remaining lemon juice mixture.
