Chicken Dijon With Artichokes
|Chicken breast halves||8 , boned and skinned|
|Fat free chicken broth||6 Tablespoon|
|Fat free chicken broth||2 Cup (32 tbs)|
|Evaporated skim milk||1 Cup (16 tbs)|
|Dijon mustard||4 Tablespoon|
|Canned artichoke hearts||14 1⁄2 Ounce, drained and sliced (1 Can)|
In a large non-stick skillet that has been sprayed with a non-fat cooking spray, saute chicken in 6 Tbs.chicken broth.
Remove from pan.
Add flour to pan and stir until smooth.
You might need to add 2 or 3 more Tbs.liquid Butter Buds if it is too dry.
Stir in 2 cups broth and skim milk.
Next add mustard.
Add artichoke hearts and simmer chicken in sauce for 30 minutes.
