Spicy Chicken

Ingredients
  Water 1⁄2 Pint
  Bouquet garni 1
  Onion 1 Small, sliced
  Carrot 1 , sliced
  Salt To Taste
  Chicken joints 4
  Butter 1 Ounce
  Curry powder 1 Teaspoon
  Peach chutney 1 Tablespoon
  Squeezed lemon juice 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
Directions

Put the water, bouquet garni, onion, carrot and a little salt into a large pan over moderate heat and bring to the boil.
Add the chicken pieces and simmer for 20 minutes.
Leave the chicken to cool in the liquid.
Mix together the ingredients for the spiced butter.
Drain and dry the chicken portions and remove the skin, if preferred.
Make several cuts in the chicken flesh with a knife and rub the spiced butter over the whole surface.
Chill for a short time, then grill (broil) the chicken pieces until cooked through and golden brown all over.
