Jalapeno Grilled Chicken
|Broiler-fryer chicken||1 , quartered|
|Vegetable oil||2 Tablespoon|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Garlic||1 Clove (5 gm), minced|
|Catsup||1 Cup (16 tbs)|
|Brown sugar||1 Tablespoon|
|Jalapeno peppers||1 Tablespoon, minced|
|Dry mustard||1⁄2 Teaspoon|
In saucepan, heat oil to medium temperature.
Add onion and garlic; cook, stirring occasionally, about 5 minutes or until onion is tender.
Add catsup, vinegar, brown sugar, jalapeno peppers, salt and mustard.
Cook, stirring occasionally, until mixture is blended.
Place chicken, skin side up, on prepared grill about 8 inches from heat.
Grill, turning every 8 to 10 minutes, about 50 minutes.
Brush chicken with sauce; grill, turning and basting with sauce every 5 minutes, about 25 minutes more or until chicken is fork tender.
