Bon Voyage Chicken
|Olive oil||1 Tablespoon|
|Red bell pepper strips||1 1⁄2 Cup (24 tbs)|
|Chopped cooked chicken breast||2 Cup (32 tbs)|
|Minced garlic||1 Tablespoon|
|Chopped fresh oregano||1 Teaspoon|
|Canned diced tomatoes with italian herbs||14 1⁄2 Ounce (Such As Contadina, 1 Can)|
|Hot cooked ziti pasta/Hot cooked penne||2 Cup (32 tbs) (About 4 Ounces Uncooked Tube-Shaped Pasta)|
|Freshly ground black pepper||1⁄2 Teaspoon|
|Thinly sliced fresh basil||1⁄4 Cup (4 tbs)|
|Grated fresh parmesan cheese||1 Ounce (1/4 Cup)|
1. Heat oil in a large skillet over medium-high heat. Add bell pepper, and saute 4 minutes or until crisp-tender. Add chicken, garlic, and oregano,- saute 2 minutes. Add tomatoes,- reduce heat, and simmer 10 minutes, stirring occasionally.
2. Add pasta and black pepper, stirring well. Place about 1 1/2 cups pasta mixture into each of 4 bowls, and top each serving with 1 tablespoon basil and 1 tablespoon Parmesan.
