1. Heat oven to 400°F. Blend mustard and honey in small bowl. Dip chicken in mustard mixture, then roll in coconut.
2. Place chicken cubes in single layer in large well-greased baking pan. Bake until chicken is golden, about 8 minutes. Turn chicken over; bake until golden, about 8 minutes longer.
