Five Spice Chicken

Ingredients
  Ground cinnamon 1 Teaspoon
  Crushed aniseeds 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Ground cloves 1⁄8 Teaspoon
  Freshly ground pepper 1⁄8 Teaspoon
  Whole chicken breasts 4
  Peanut oil/Cooking oil 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Unsweetened pineapple juice 3⁄4 Cup (12 tbs)
  Parsley 1 Tablespoon
Directions

Combine ground cinnamon, crushed aniseed, salt, ground allspice, cloves, and pepper.
Rub the chicken breasts with 1 teaspoon of the spice mixture.
Heat peanut or cooking oil and garlic in skillet.
Add the chicken breasts to the hot oil; brown on both sides.
Reduce heat.
Add unsweetened pineapple juice; simmer, covered, till chicken is tender, about 35 minutes.
Transfer chicken breasts to platter; spoon sauce over chicken.
Garnish with parsley.
