Tater Coated Chicken
|Slightly beaten egg||1|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
|Broiler fryer chicken||3 Pound, cut up|
|Packaged instant mashed potato flakes||1 Cup (16 tbs)|
Combine egg, cheese, water, and salt.
Melt butter in large shallow baking pan.
Dip chicken in egg mixture; roll in potato flakes.
Place in pan, skin side up.
Bake at 375° for 50 to 60 minutes.
Do not turn.
