Roasted Mint Laced Chicken
|Whole chicken||3 Pound|
|Garlic powder||1⁄4 Teaspoon|
|Lemon pepper||1⁄4 Teaspoon|
|Mint leaves||1 Cup (16 tbs)|
|Melted butter||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
Rinse chicken with cold water and pat dry. Combine salt, garlic powder and lemon pepper. Sprinkle inside chicken cavity, then place mint leaves inside cavity.
Combine butter and lemon juice. Brush over outside of chicken. Place chicken on broiler pan roasting rack.
Convection Roast at 325°F for 1 to 1 1/2 hours until done.
