Saucy Apricot Chicken
|Boneless skinless chicken breast halves||32 Ounce (Eight 4 Ounce Each)|
|Vegetable oil||1 Tablespoon|
|Apricot jam||1 Cup (16 tbs)|
|Salad dressing||1 Cup (16 tbs) (Catalina)|
|Onion soup mix||3 Tablespoon|
In a large skillet, brown chicken in butter and oil over medium heat for 3 minutes on each side or until lightly browned.
Combine the apricot jam, salad dressing and soup mix; pour over the chicken.
Cover and simmer for 10 minutes or until juices run clear.
