Chilled Chicken And Bean Sprouts

Ingredients
  Whole chicken breast 1
  Salt 1⁄2 Teaspoon
  Mung bean sprouts 8 Ounce
  Soy sauce 1 Tablespoon
  Vinegar 2 Teaspoon
  Sesame oil 1 Teaspoon
  Sugar 1⁄2 Teaspoon
  Monosodium glutamate 1⁄8 Teaspoon
Directions

Heat chicken, salt and just enough water to cover to boiling; reduce heat.
Cover and simmer until chicken is done, 25 to 30 minutes.
Cool.
Remove chicken from bones and skin; cut chicken into strips.
Pour boiling water over bean sprouts.
Rinse in cold water; drain.
Place chicken and bean sprouts in shallow glass or plastic dish.
Mix remaining ingredients; pour over chicken and bean sprouts.
Cover and refrigerate at least 1 hour.
Garnish with chopped green onions if desired.
