Grilled Lemon Sage Chicken
|Skinless boneless chicken breast fillets||6 , all visible fat removed|
|Olive oil||1⁄2 Cup (8 tbs)|
|Fresh lemon juice||1⁄3 Cup (5.33 tbs)|
|Chopped fresh rosemary||1 Tablespoon|
|Chopped fresh sage||1⁄4 Cup (4 tbs), chopped|
|Black peppercorns||1 Teaspoon, cracked|
|Garlic||3 Clove (15 gm), minced|
|Grated lemon rind||1 Teaspoon|
|Lemon slices||6 , cut in half (Garnish)|
|Sage leaves||4 (Garnish)|
Rinse chicken and pat dry.
Place pieces between two sheets of plastic wrap and flatten to 1/8 inch thickness with a mallet.
Arrange chicken in a glass or enamel baking dish.
In a small bowl, combine oil, lemon juice, herbs, salt, pepper, garlic and lemon rind.
Pour over chicken and turn pieces to coat evenly.
Cover and refrigerate for several hours or overnight, turning pieces occasionally.
Grill marinated chicken over hot coals.
