Oven Fried Chicken
|Chicken breast halves/8 small thighs||4 Small|
|Fine dry bread crumbs||1⁄3 Cup (5.33 tbs)|
|Dried basil/Oregano / italian seasoning / 1/4 teaspoon dried thyme / sage / fine herbs / marjoram||1⁄2 Teaspoon, crushed|
|Margarine||1 Tablespoon, melted|
Remove skin from the chicken.
Rinse chicken; pat dry.
In a small mixing bowl stir together the bread crumbs, herb and pepper.
Add the melted margarine and toss to coat.
Sprinkle the skinned side of each chicken piece with the crumb mixture, pressing onto the chicken to coat.
Arrange chicken pieces, coating side up, in a 12 x 7 1/2 x 2-inch baking dish.
Bake in a 400° oven for 25 to 30 minutes or till the chicken is tender and no longer pink.
Do not turn.
