Chicken Divine With Broccoli
|Frozen broccoli||2 Bunch (200 gm)|
|Sliced chicken breast/Turkey / capon||24|
|Creamed potatoes||3 1⁄2 Cup (56 tbs), creamed|
|Hollandaise sauce||1 1⁄2 Cup (24 tbs)|
Wash fresh broccoli (or prepare frozen as directed on package), cut off any tough stalk or leaves.
Place in open vessel in enough boiling water (slightly salted) and let cook 20 minutes, or until tender.
Drain, pour over it melted butter, roll broccoli around in butter and keep heated.
Have potatoes prepared (see recipes) and keep hot over boiling water, (in double boiler).
Have ready Hollandaise sauce, made to be served immediately.
Toast and butter bread.
In the center of individual serving plates place the toast points.
Lay on these several thin slices of chicken, turkey, or capon.
Over this place the broccoli spikes.
Flute the hot potatoes around edge of plate.
