Yam & Chicken Dinner
|Sweet potato/Sweet potato||1⁄2 Pound, scrubbed (1 Medium Size)|
|Chicken breast||1⁄2 Pound, skinned and boned|
|Spinach leaves||8 Large, washed|
Cut a lengthwise slit in yam almost through to each end and set on a non-metal dinner plate.
Cover tightly with plastic wrap and microwave on HIGH (100%) until yam is soft when pierced, 4 to 5 minutes.
Arrange chicken next to yam, cover, and microwave, turning chicken over once, until meat in thickest part is no longer pink (cut to test), 4 to 5 more minutes.
Slip spinach under chicken.
Cover again and microwave just until spinach is wilted, about 30 seconds.
Open slit in yam and tuck butter inside; serve with lemon half.
