Mint Laced Chicken
|Whole chicken||3 Pound (1 Piece)|
|Garlic powder||1⁄4 Teaspoon|
|Lemon pepper||1⁄4 Teaspoon|
|Mint leaves||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs), melted|
|Lemon juice||2 Tablespoon|
Rinse chicken with cold water and pat dry.
Combine salt, garlic powder and lemon pepper.
Sprinkle inside chicken cavity.
Place mint leaves in cavity of chicken.
Combine butter and lemon juice; brush over outside of chicken.
Place chicken on trivet in broiler pan.
Convection Bake at 350°F for 1 to 1 1/4 hours.
