Elegant Chicken A La King

  Sliced mushrooms 1 Cup (16 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Butter 2 Tablespoon
  All purpose flour 2 Tablespoon
  Light cream 2 Cup (32 tbs)
  Cooked cubed chicken 3 Cup (48 tbs)
  Butter 1⁄4 Cup (4 tbs), softened
  Egg yolks 3
  Paprika 1⁄2 Teaspoon
  Dry sherry 2 Tablespoon
  Lemon juice 1 Tablespoon
  Onion juice 1 Teaspoon
  Chopped canned pimiento 2 Tablespoon
  Toast points 4

In saucepan cook mushrooms and green pepper in 2 tablespoons butter till tender but not brown; push vegetables to one side.
Blend flour and 3/4 teaspoon salt into butter in saucepan.
Stir in light cream; cook and stir till thickened and bubbly.
Add chicken; heat, stirring occasionally.
Meanwhile, in small bowl blend together 1/4 cup butter, egg yolks, and paprika; set aside.
Stir the sherry, lemon juice, and onion juice into chicken mixture; bring to boiling.
Add yolk mixture, stirring till blended.
Remove from heat.
Stir in chopped pimiento.
Serve over toast points.
