|Broiler fryer chicken||3 Pound, cut up (Ready To Cook, 1 Bird)|
|Grated lime peel||1⁄2 Teaspoon|
|Lime juice||1⁄4 Cup (4 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Chili powder||1⁄2 Teaspoon|
Brush chicken pieces all over with lime juice.
Place in a 13x9x2-inch baking dish; cover and refrigerate 1 hour.
Uncover; brush all over with the melted butter.
In a paper bag or a plastic sack combine the flour, salt, chili powder, and lime peel; add the chicken pieces, a few at a time, and shake to coat with flour mixture.
Return chicken pieces to baking dish.
Bake, uncovered, at 375° till done, about 1 hour.
