What could be simpler than chicken baked with a fruity chutney glaze? Add a curried rice pilaf with peas, and you've got supper.
Spray a 12- by 15-inch baking pan with cooking spray.
Arrange chicken pieces, skin side up, in pan.
Bake, uncovered, in a 400° oven until meat near thighbone is no longer pink when slashed (about 35 minutes).
Brush evenly with chutney.
Return to oven and bake just until glaze is set (about 5 more minutes).
