Tomato Broccoli Chicken
|Whole chicken breasts||2 , skinned, boned, and halved lengthwise|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Frozen cut broccoli||10 Ounce, thawed (1 Package)|
|Lemon juice||1 Teaspoon|
|Dried thyme||1⁄4 Teaspoon, crushed|
|Tomatoes||3 Medium, cut into wedges|
Sprinkle chicken lightly with a little salt and pepper.
Cut chicken into 1/2-inch-wide strips.
In medium skillet cook chicken and onion in butter or margarine till chicken no longer is pink.
Stir in broccoli, lemon juice, salt, thyme, and 1/8 teaspoon pepper.
Cover; simmer 6 minutes.
Simmer, covered, 3 to 4 minutes more
