Curried Chicken And Potato Packets
|Frozen cooked chicken breast strips||9 Ounce (1 Package)|
|Potatoes||4 Medium, cut into 3/4-inch cubes|
|Peeled baby carrots||1 1⁄2 Cup (24 tbs) (Packaged Variety)|
|Onion||1 Small, thinly sliced|
|Light dairy sour cream/Plain low-fat yogurt||1⁄2 Cup (8 tbs)|
|Curry powder||1 Teaspoon|
|Dijon-style mustard||1 Teaspoon|
|Crushed red pepper||1⁄8 Teaspoon|
In a large bowl combine frozen chicken, potatoes, carrots, and onion; set aside.
In a small bowl combine sour cream, curry powder, mustard, salt, paprika, and crushed red pepper.
Pour over chicken mixture; toss to coat.
Divide chicken mixture among the foil pieces.
Bring up opposite long edges of foil and seal with a double fold.
Fold ends to completely enclose chicken mixture, leaving space for steam to build.
Place chicken packets on the rack of an uncovered grill directly over medium coals.
Grill about 25 minutes or until vegetables are tender, turning once or twice.
To serve, carefully and slowly open packets to allow steam to escape.
