Cilantro Grilled Chicken Sandwiches
|Chopped fresh cilantro||2 Tablespoon|
|Chopped onion||2 Tablespoon|
|Chopped red bell pepper||2 Tablespoon|
|Chopped tomato||2 Tablespoon|
|Fresh lime juice||1 Tablespoon|
|Olive oil||1 1⁄2 Teaspoon|
|Soy sauce||1 1⁄2 Teaspoon|
|Ground red pepper||1 Dash|
|Garlic||1 Clove (5 gm), peeled|
|Skinless boneless chicken breast halves||8 Ounce|
|Lettuce leaves||2 (Curly Leaf)|
|Italian bread slices||2 Ounce, toasted (4 Slices, 1/2 Ounce Each)|
1. Place first 9 ingredients in a food processor; process until minced.
2. Place 3 tablespoons cilantro mixture and chicken in a small zip-top plastic bag; seal bag, and marinate in refrigerator at least 4 hours. Place remaining cilantro mixture in a small bowl; cover and chill.
3. Prepare grill. Remove remaining cilantro mixture from refrigerator; let stand at room temperature. Place chicken on grill rack coated with cooking spray; cover and grill 4 minutes on each side or until done.
4. Place a lettuce leaf on each of 2 bread slices;top each with a chicken breast. Spoon remaining cilantro mixture evenly over chicken, and top
with remaining bread slices
