Simple Coq Au Vin

Ingredients
  All purpose flour 1 Cup (16 tbs)
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Frying chicken 3 Pound, cut into pieces
  Bacon slices 3 , cut in 1inch pieces
  Onion 1 Large, cut in quarters
  Mushrooms 8 Ounce, sliced (1 Package)
  Garlic 1 Clove (5 gm), pressed/finely chopped
  Red wine 1 Cup (16 tbs)
  Brandy 2 Tablespoon
  Bay leaf 1
  Snipped parsley 1 Tablespoon
Directions

Combine flour, salt and pepper in a shallow dish.
Roll chicken in flour mixture.
Set aside.
Place bacon in 2-quart glass casserole.
Microwave 2 minutes on high, or until almost crisp.
Add chicken and remaining seasoned flour to bacon and drippings.
Mix in onion, mushrooms, garlic, wine, brandy, bay leaf and parsley.
Cover tighly.
Microwave 15 minutes on high.
Stir. (Do not cover) Microwave 10 minutes on high, or until chicken is fork tender.
Let stand 5 to 10 minutes, covered.
Remove bay leaf before serving.
