Simple Coq Au Vin
|All purpose flour||1 Cup (16 tbs)|
|Frying chicken||3 Pound, cut into pieces|
|Bacon slices||3 , cut in 1inch pieces|
|Onion||1 Large, cut in quarters|
|Mushrooms||8 Ounce, sliced (1 Package)|
|Garlic||1 Clove (5 gm), pressed/finely chopped|
|Red wine||1 Cup (16 tbs)|
|Snipped parsley||1 Tablespoon|
Combine flour, salt and pepper in a shallow dish.
Roll chicken in flour mixture.
Place bacon in 2-quart glass casserole.
Microwave 2 minutes on high, or until almost crisp.
Add chicken and remaining seasoned flour to bacon and drippings.
Mix in onion, mushrooms, garlic, wine, brandy, bay leaf and parsley.
Microwave 15 minutes on high.
Stir. (Do not cover) Microwave 10 minutes on high, or until chicken is fork tender.
Let stand 5 to 10 minutes, covered.
Remove bay leaf before serving.
