Grilled Stuffed Chicken Breasts
|Chicken breast halves||6 , skinned and boned|
|Dijon-style mustard||3 Tablespoon|
|Cooked ham slice||6|
|Shredded swiss cheese||1 Cup (16 tbs)|
|Vegetable oil||3 Tablespoon|
With meat mallet, pound chicken breasts to 1/4-inch thickness.
In small bowl, blend butter with 2 tablespoons of the mustard; spread over one side of each chicken breast.
Cut ham slices to fit chicken breasts.
Place 1 ham slice on each breast; top with shredded cheese.
Roll chicken pieces and skewer each to enclose ham and cheese.
In small bowl, combine remaining 1 tablespoon mustard, the oil and honey; brush on all sides of each roll.
Grill chicken, on covered grill, over medium-hot briquets 25 to 35 minutes or until chicken is tender, basting often with mustard-honey mixture.
