Herbed Tomato Chicken
|Onions||2 Medium, sliced|
|Garlic||2 Clove (10 gm), minced|
|Whole chicken breasts||3 Medium, skinned and halved lengthwise|
|Canned tomatoes||7 1⁄2 Ounce, cut up (1 Can)|
|Tomato sauce||1⁄2 Cup (8 tbs)|
|Sliced mushrooms||2 1⁄2 Ounce, drained (1 Jar)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Dried basil||1 Teaspoon, crushed|
|Dry white wine||1⁄4 Cup (4 tbs)|
In skillet combine onions, garlic, and 1/2 cup water.
Bring to boiling.
Cover and simmer 10 minutes or till onion is tender.
Add chicken to skillet, Combine undrained tomatoes, tomato sauce, mushrooms, green pepper, basil, salt, bay leaf, and dash pepper.
Pour over chicken.
Cover and simmer for 30 minutes.
Stir in wine.
Cook, uncovered, 15 minutes more.
Remove bay leaf.
Skim excess fat from juices, Transfer chicken and sauce to serving platter.
