Chicken With Herbs

Ingredients
  Fine bread crumbs 2 Cup (32 tbs)
  Minced parsley 2 Tablespoon
  Dried tarragon 1⁄2 Teaspoon
  Dried basil 1⁄2 Teaspoon
  Dried thyme 1⁄2 Teaspoon
  Whole chicken breasts 2 , boned (Skin Intact)
  Extra virgin olive oil 1 (For Brushing Chicken)
  Salt To Taste
  Pepper To Taste
Directions

To prepare stuffing, toss bread crumbs with parsley, basil, tarragon, thyme, salt, and pepper.
Loosen skin over chicken.
Lightly spoon about 1/4 cup stuffing under skin.
Replace skin over chicken.
Brush each chicken breast with oil.
Preheat stovetop grill.
Grill chicken breasts over medium-high heat, skin side down, for 4 minutes.
Turn chicken breasts over and continue grilling for 3 minutes or until chicken is done.
Chicken is done when slightly firm to the touch and juices run clear when chicken is cut with a knife.
