Red Cooked Chicken

Ingredients
  Water 1 1⁄2 Cup (24 tbs)
  Soy sauce 3⁄4 Cup (12 tbs)
  Green onions 8 , cut diagonally into 1 1/2 inch lengths
  Dry sherry 1⁄2 Cup (8 tbs)
  Packed brown sugar 2 Tablespoon
  Grated fresh ginger root 2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Star anise/1/2 teaspoon aniseed, crushed 1 , crushed
  Broiler fryer 3 Pound, cut up
Directions

In 12 x7 1/2 x 2-inch baking dish, combine water, soy sauce, green onions, sherry, brown sucar, gingerroot, garlic, and anise; mix well.
Place chicken in baking dish, turning to coat with sauce.
Cook, covered, at MEDIUM HIGH (7) for 25 minutes or till done, spooning sauce over and rearranging chicken once.
Strain broth and skim off excess fat; pass some broth with chicken.
