Mini Pitas With Curried Chicken
|Light mayonnaise||1⁄3 Cup (5.33 tbs)|
|Mango chutney||2 Tablespoon|
|Curry powder||1 Teaspoon|
|Finely diced cooked chicken||1 1⁄2 Cup (24 tbs)|
|Diced unpeeled apple||1⁄2 Cup (8 tbs)|
|Diced radishes||1⁄3 Cup (5.33 tbs)|
|Finely chopped green onions||2 Tablespoon|
|Mini pitas||10 (3 Inch / 8 Centimeter Size)|
|Red leaf lettuce/Boston lettuce||1|
1. In a bowl, blend mayonnaise, chutney and curry powder until smooth. Stir in chicken, apple, radishes and green onions; season with salt to taste.
2. Cut pitas in half to make pockets. Line each pocket with lettuce; spoon in chicken mixture. Arrange on serving plate.
