Chicken In Sauterne
|Frying chicken||3 Pound|
|Seasoned flour||1 Cup (16 tbs), seasoned|
|Green onions||6 , finely chopped|
|Parsley||4 Tablespoon, finely chopped|
|Sauterne||2 1⁄2 Cup (40 tbs)|
|Mushrooms||18 , sliced|
Salt and pepper chicken.
Dust chicken with flour.
Saute chicken in butter until golden brown.
Add onions, parsley, thyme, basil and sauterne.
Gently simmer chicken until tender.
Cover while cooking.
If chicken seems dry, add a little more wine as it cooks.
However, heat the wine before adding to chicken.
Add mushrooms the last 15 minutes of cooking.
Simmer 1 hour.
