Staci Wallace and Jill Cramer are in the kitchen cooking up a delicious Ranch Chicken Delight.
1lb. Boneless, Skinless, Chicken Breast
2 Cups Brown Rice
Frozen Mixed Vegetables (Peas, Carrots, Corn, etc.)
4 tbs. Light Ranch Dressing
Fresh Red Bell Pepper
2 Cups of 2% Sharp Cheddar Shredded
Take the two cups of brown rice and soak it in 1 ¾ cup of water for 5 minutes. Then evenly distribute the rice to 4 sheets of aluminum foil. Place one chicken breast on top of the rice on each sheet of foil. Sprinkle chili powder on top of chicken to taste. Spread the frozen vegetables evenly across each chicken breast. Drizzle one table spoon of ranch dressing on each chicken breast. Add diced red bell paper. Sprinkle cheddar cheese over the top. Wrap each meal in the foil, allowing for a little air room to help with the steaming process.
Cook in the oven at 400 degrees for 35 to 40 minutes so that the chicken cooks thoroughly and the juices run clear.
When the chicken is done, remove the meal from the foil. Take care not to burn yourself by the steam.
